How to Make Korean Kimchi: Tips & Tricks for Perfect Kimchi

How to Make Kimchi:

1. Salting the Cabbage

Cut the napa cabbage in half lengthwise. Dissolve 1 cup of salt in 10 cups of water to make a brine. Soak the cabbage in the brine for about 6-8 hours, flipping it occasionally to ensure even salting.

2. Making the Rice Paste

In a small pot, mix 1 cup of water with 2 tbsp of glutinous rice flour. Cook over low heat while stirring until it turns into a thick, transparent paste. Let it cool.

3. Preparing the Seasoning Paste

Slice the radish into thin strips and cut the green onions into 2-inch pieces. Mince the garlic and ginger. In a large bowl, mix the radish, green onions, minced garlic and ginger, red pepper powder, fish sauce, sugar, and cooled rice paste to create the seasoning.

4. Applying the Seasoning

Rinse the salted cabbage well and drain the excess water. Spread the seasoning mixture evenly on each layer of cabbage leaves.

5. Fermenting the Kimchi

Place the seasoned cabbage into a container, pressing it down firmly. Leave it at room temperature for one day to start the fermentation process, then store it in the refrigerator for long-term preservation.
